BBQ meatballs w/ baked sweet potato


Ingredients:

- 2 lbs of ground beef (I used 85/15)

- Bbq sauce (I used the classic bbq sauce by The New Primal)

- 4-6 medium sweet potatoes

- bbq seasoning (I used the classic bbq seasoning by The New Primal, salt, pepper,

garlic powder & onion powder


For the sweet potatoes:

Wash and dry potatoes. Then pierce with roughly a dozen small holes with a sharp knife. Bake on a foil lined sheet pan at 425 degrees for about 45 minutes or until soft.


Or you can use this same method and cook in the air fryer at 400 degrees for about 30 minutes.


For the meatballs:


Combine ground beef with about 2 tablespoons of bbq seasoning and about a teaspoon of salt, pepper, garlic powder and onion powder. Mix with hands until well combined. Heat 1 tablespoon of beef tallow or preferred cooking oil in a pan on medium heat. Form meat into balls adding one by one to the pan. Brown on all edges then reduce heat to low/med and add bbq sauce covering the meatballs. Simmer for about 20 minutes stirring occasionally.



Side notes:

This recipe will make about 4-6 portions and takes about 1 hour from start to finish. Don't forget to drizzle some of that left over bbq sauce over top of your sweet potato, yum! Another fun way to eat this meal is to cut your sweet potato in half length wise and remove some of the guts then adding a couple of meatballs to the middle as a yummy sub sandwich...mozzarella on top would really kick it up a notch.
